But what exactly is gluten?

 

Gluten is a protein found in wheat, oats, rye, barley and triticale.

Gluten free and gluten reduced diets have continued to grow in popularity over the past few years, people choosing a gluten free diet for two main reasons:

1. Coeliac disease. A medical condition where the immune system reacts abnormally to gluten, causing gastrointestinal symptoms, fatigue, iron deficiency anaemia and or other nutritional deficiencies. Currently in Australia between 1-2% of the population has this condition. 

2. Many people are successfully managing a range of adverse symptoms they attribute to the consumption of wheat and gluten containing foods. Approximately 1.8 million people in Australia are avoiding or limiting their consumption of wheat based products based on a recent CSIRO study.
